Casillero del Diablo Carmenere
Chile A native French variety, this grape extinguished almost completely after the great phylloxera plague. It resurfaced in Chile at the end of the XX century, where it breeds wines of intense color, soft and round tannins, and restrained acidity. Characteristic aromas of chocolate, coffee and, in a subtler way, moist soil. | Appellation | Rapel Valley. |
|---|
| Vintage | 2007. |
|---|
| Soil | Riverbank. |
|---|
| Aging | 8 months in American Oak barrels, 70% of the blend. |
|---|
| Color | Deep, intense violet-red. |
|---|
| Aroma | Intense and expressive fruit with leading plum and black cherry notes. Also bitter chocolate, coffee and toast. |
|---|
| Palate | Good structure and concentration, smooth and elegant tannins. Ripe fruit makes a comeback, in balance with the wood; long and very pleasant finish. |
|---|
| Food Pairing | Meats, vegetables, pizza and ripe cheeses. |
